4 Years of Rustic Stone

Another year has passed and we’re taking a break for a well-deserved moment to celebrate. It’s hard to believe that Rustic Stone opened its doors for the first time four years ago. In four years, we’ve evolved from the ‘new kids on the block’ to one of Dublin’s most well-loved restaurants, and now we’re looking to grow and evolve even more. DSC_3525-Edit (2)

It’s been a journey, to say the least. Four years ago, Ireland was in the height of the recession. Despite personal experience with the severity the recession could bring to a restaurant, Dylan was determined to start a new, innovative and original concept. That opportunity came in the form of a partnership with nutritionist Erika Doolan. Already an established authority in the health and fitness scene in Ireland, Erika was instrumental in the design of Rustic Stone.

erika dylanTogether, they spent nearly a year developing a menu to specifically cater towards healthy eating- but without sacrificing on flavour. When Rustic Stone opened its doors, it quickly became one of Dublin’s most exciting restaurants. Diners delighted at the opportunity to use our volcanic stones at the table, as well as combing through a new style of menu that gave them the information the needed to make the choices that suited their lifestyle.

A lot has changed in Ireland, and in Rustic Stone. Restaurants making considerations for different eating habits, which was once a novel characteristic, is now more normal. Our diners are more comfortable with our butter and oil free, whole food philosophy. They’ve embraced RAW menu, with every item raw or cooked below 46 degrees to retain as many of the nutrients as possible.DSC_0476-Edit

We’re proud of these achievements, and we’re excitedly looking forward to our fourth year of business. As many of you know, or have seen, we’re under construction. For the last few months, workers have been busy each day, demolishing and rebuilding the inside of our building and creating more and more room for us to work. Our move upstairs will see the creation of a development kitchen that will give Dylan the opportunity to work on new projects with our valued team.

In four years, we’ve been lucky enough to share countless memories with you, our loyal customers and fans. With thousands of people passing through our doors weekly, we’ve seen Rustic weddings, anniversaries, birthdays and retirements, as well as our fair share of first dates, nights out with friends and quick bites on lunch break. You’ve taught us that Rustic Stone and our healthy eating philosophy are more than just an occasion, we’re a part of your life. build

At this milestone, our fourth birthday, we want to take the opportunity to thank you. You’ve embraced Dylan’s concept, helping to further their vision for healthy eating as a lifestyle in Ireland. Your constant support is what keeps us going. It’s what keeps us driven to develop as a restaurant, to provide for you the value you deserve and the flavour you love.

We’ve enjoyed every minute of four years in business, and we’re eagerly looking forward to the changes that the coming year will bring.
